Plant Based Meals

So the last week or so I’ve had to get used to getting up a little earlier to prepare my plant based breakfast and lunch. Some days go smoother than others, but I’ll get a routine down I’m sure.

What goes into my meals

plant basedMy breakfast consists of a plant base vegetable juice with a fruit smoothie. So first I’ll juice some carrots, celery, kale and spinach, about 8oz. Then I’ll throw some kind of frozen fruit mix in my Ninja. I try to have some kind of berries with mango, pineapple or apples. Depending how I feel, I may throw some oats, nuts or seeds into the mix to give it some substance. Then I top it off with some essential oils. Most days I put a couple drops of grapefruit or tangerine, but the the last few I add in a drop or two of cilantro.  Throw my juice in and blend! I use the 320z Ninja travel mug, so this really fills me until lunch.

I always keep an apple, nuts and seeds with me if I crave a mid morning snack.

For lunch, it’s primarily a salad. I always start with some dark greens, I found a “power greens” mix at BJ’s that’s really good. Then sometimes it’s just kale and spinach. Here’s where I’ll mix it up. I always try to add some kind of berry and nuts or seeds to it. It gives the salad some sweet umph. Personally I like to add some chick peas and black olives to it also.

I need to look into some dressings without using oil. So now you EVOO people out there say to just use the olive oil, that it’s a “good” oil to use, but for now I’m doing with out. Balsamic vinegar and some lemon and/or lime essential oil is they way I’m going, I love the taste, and it works well for me on my salad. Splash a little over the salad, and it’s all good!

Loving the Plant Based Way

So that’s it for my plant based first half of the day, and so far I’m digging it. It’s keeping me satisfied, and I’m not loosing out in taste.
